Avocado Tomato Breakfast and Hillcrest Farmers Market

20170806_103111Preheat oven to 425ºF

  • 1 avocado
  • 1 egg
  • 1 tomato, sliced

Cut the avocado in half and remove the pit. Scramble the egg and pour into the pit whole. Then place a slice of tomato in each half. Sprinkle some pepper and salt on the top. Line a pan with tinfoil and place in the oven for 15-20 min. I also broiled it for the last 2 minutes. Enjoy!

I got to go to the Hillcrest Farmers market today! It was wonderful to walk around and mingle with everyone. Everything looked so delicious and all the flowers were lovely.


There were some gorgous cut blooms which were all so tempting to buy but I prefer live plants because you get to enjoy them even longer.

Find the Hillcrest Farmers Market at 3960 Normal Street at Lincoln from 9am – 2pm on Sundays.

And this was my roommate holding onto all of my plant babies.
